When I wanted to cut out gluten and sugar from my diet a few years ago, I found this wonderfully light and fluffy almond flour cake<\/strong> recipe on Healthy<\/a> Recipes<\/a> by Vered DeLeeuw<\/strong><\/a>.  <\/p>\n\n\n\n

This cake is one of my favorite desserts now, and I've been making my own version ever since.<\/p>\n\n\n\n

\u201cDespite containing just a \u00bd cup of honey, this cake is delightfully sweet but not overly so. And it's easy to mix in a single bowl - the prep time is just 15 minutes.\u201d<\/p>\n<\/blockquote>\n\n\n\n

Original Ingredients<\/strong><\/h4>\n\n\n\n

Here's an overview of what you'll need:<\/p>\n\n\n\n

    \n
  • Butter<\/strong>: For greasing the pan.<\/li>\n\n\n\n
  • Eggs:<\/strong> I use large eggs in most of my recipes, this one included.<\/li>\n\n\n\n
  • Honey<\/strong>: Real honey or a sugar-free substitute.<\/li>\n\n\n\n
  • Vanilla extract<\/strong>: It's best to use pure vanilla extract.<\/li>\n\n\n\n
  • Almond flour:<\/strong> I use blanched, finely ground almond flour. I don't recommend using a coarse almond meal in this recipe.<\/li>\n\n\n\n
  • Salt:<\/strong> Just a little to enhance the other flavors.<\/li>\n\n\n\n
  • Baking soda<\/strong>: You can replace it with 2 teaspoons of baking powder (gluten-free if needed).<\/li>\n<\/ul>\n\n\n\n

    The ingredients I use are mostly the same as above. I use honey only.<\/p>\n\n\n\n

    Rather than using butter, I use a regular baking pan lined with parchment paper. <\/p>\n\n\n\n

    Sometimes I add cream cheese and honey icing.<\/p>\n\n\n\n

    1. Lemon Poppy Seed Almond Flour Cake: <\/strong>Add some lemon extract and 1\/4 cup poppy seeds.<\/li>\n\n\n\n
    2. Fruity Almond Flour Cake: <\/strong>Add 1\/4 cup dried cranberries or sliced apricots, and candied ginger (chopped up).<\/li>\n\n\n\n
